Tofu Kofta

With homemade cashew cream for the dressing!

Ingredients

Sauce
  • shredded garlic
  • ginger
  • spring onion
  • coriander
  • fresh tomatoes
  • tomato paste
  • coconut milk
  • masala powder
  • curcuma powder
  • curry powder
  • black pepper
  • red paprika powder
  • wild honey
  • salt

Directions

  1. Mix minced tofu, boiled sweet potatoes, corn flower, dried marjoram, shredded garlic and light soy sauce
  2. Make several balls from the mixture and put them in the oven to bake for 15-20 mins under 200°C. Alternatively, you can also use potatoes instead of sweet potatoes and air fry/deep fry the balls instead
  3. The cashew cream can be simply made by blending soaked cashew and a bit of water with salt. Easy and very condensed creamy texture full of flavor!
