Tofu Quiche

Super simple and comforting food, perfect for a lazy Sunday!

Directions

  1. blend 450g of tofu
  2. put 400g baby spinach in boiling water for 10s, take it out and squeeze the water out of the spinach
  3. stir fry some mushrooms together with olive oil, shredded garlic, black pepper, red paprika powder, light soy sauce and honey
  4. stir fry one shredded red onion with olive oil
  5. mix the blended tofu together with the cooked spinach, mushrooms and red onions together with some salt, black pepper, curcuma powder, cayenne pepper and corn starch.
  6. pour the mixture into quiche pastry
  7. bake under 175-200°C for around 15-20mins
