Tofu Stuffed Tomatoes

Stuffed tomatoes with smoked tofu inspired by Greek traditional dish

Ingredients

Filling
  • smoked tofu
  • bulgur (precooked)
  • edamame beans
  • salt & pepper
  • shredded garlic
  • ground cumin
  • ground nutmeg
  • dried oregano
  • fresh basil
  • olive oil
  • pomegranate sauce

Directions

Mix the ingredients together and stuff them in carved tomatoes to bake for 30 mins under 220°C with cover and 10 more mins without cover. We roasted the inside of the tomatoes together with red onions as well. Don’t forget to put a little bit of olive oil and water in the bottom of the baking tray so they don’t burn.
