Vegan Pho with Tofu & Oyster Mushrooms
We used Oyster mushrooms and fried bean curd rich in texture instead of beef in traditional pho.
Ingredients
- Fried bean curd (tofu)
- Oyster mushrooms
- Fresh ginger
- Shredded garlic
- Spring onion
- Chilli pepper
- Coriander
- Mint
- Pomegranate sauce/sticky vinegar
- Sriracha sauce
- Salt/veggie powder
- Soy sauce (instead of fish sauce)
- Cinnamon
- Star anise
- Pimento
Vegetable broth tends to lack flavor and depth. To avoid the problem, we suggest the following tips:
Directions
- Fry the onion and fresh shredded ginger first in a pan
- Add two 3-inch cinnamon, 2 star anise, 3 clove and several pieces of pimento when the onion and ginger are slightly burnt
- Add water to the pan together with 1-2 spoons of light soy sauce and salt/veggie powder, boil for 20-30 minutes
- Filter the soup to get rid of the onions and spice
