Vegan Pho with Tofu & Oyster Mushrooms

We used Oyster mushrooms and fried bean curd rich in texture instead of beef in traditional pho.

Ingredients

  • Fried bean curd (tofu)
  • Oyster mushrooms
  • Fresh ginger
  • Shredded garlic
  • Spring onion
  • Chilli pepper
  • Coriander
  • Mint
  • Pomegranate sauce/sticky vinegar
  • Sriracha sauce
  • Salt/veggie powder
  • Soy sauce (instead of fish sauce)
  • Cinnamon
  • Star anise
  • Pimento

Vegetable broth tends to lack flavor and depth. To avoid the problem, we suggest the following tips:

Directions

  1. Fry the onion and fresh shredded ginger first in a pan
  2. Add two 3-inch cinnamon, 2 star anise, 3 clove and several pieces of pimento when the onion and ginger are slightly burnt
  3. Add water to the pan together with 1-2 spoons of light soy sauce and salt/veggie powder, boil for 20-30 minutes
  4. Filter the soup to get rid of the onions and spice
