You Po Noodles with Fried Tofu
”you po” (literally means pouring oil) is a traditional way of cooking noodles in Shan Xi province, China. We added fried tofu and some veggies to make this dish healthier.
Directions
Preparing tofu and veggies
- Cut fresh tofu into pieces and marinate them with black pepper, light soy sauce and garlic
- Fry the marinated tofu pieces on the pan until they are nicely tanned on both sides
- Stir fried some chopped tomatoes with spring onions, shredded garlic, light soy sauce, paprika powder and sticky pomegranate sauce
- Put Pak Choi and bean sprouts inside boiling water for 10-20s
Making You Po
- Boil some thick noodles (the one we used can easily be found in Asian market)
- Drain the noodles and set them in a bowl
- Pour some dried chili pepper, chili powder, chopped spring onions and shredded garlic on the top of the noodles
- Warm up some olive oil in a hot pan (2-3 tbsp per portion) The oil needs to be very hot, until it gets a little bit Smokey is the best
- Pour the hot oil on the top of the noodles
- Put the prepared tofu and veggies together with the noodles
